Thank you for the excellent telephone conversation yesterday. This blog article and the related blog about Desired Dough Temperature seem to be answering some of my bread making mysteries. I conducted an experiment this morning with my Ankarsrum dough mixer. I estimated a Friction Factor of 18 degrees F. for the Ankarsrum mixer, using a brief "mixing" of the ingredients followed by kneading for four minutes. The previous post by Tricia introduced an interesting thought about the metal bowl being a heat sink to take heat out of the dough - more things to think about!
