I’m confused about the hydration. You mention that it is a high hydration dough, which I consider to be 70% or so. Yet I calculate this one at about 50%. (478 g of Super 10, 478 g of Clear, and 482 g of KAF flour for a total of 1438 g of flour compared to 744 g of water +honey. That’s 52%). What am I missing?
