I've been making modified ermine frosting for our cupcakes that we sell at the Farmers market. It holds up pretty decently after 6hrs... customers enjoy it too, got a few compliments. I was on here to look if anything beats ermine frosting for warm temperatures as the next market is this Saturday. Figured maybe try something new. My recipe is modified ermine frosting I made, we used honey and not sugar, coconut oil not butter. Despite these modifiers it worked well but Im excited about using sugar this time. Last hour they're looking "O.K" not terrible or anything, but I'm trying to have them look nice all day. Gonna put an ice pack underneath them in our display as a cheat code. Friend shared that trick. I got Florida Crystals organic raw sugar and their organic turbinado. Demoing the raw sugar with our ermine recipe tomorrow. Might scoop up some grass fed butter.. and make it traditional as coconut oil melts at a lower temp than butter does.
Even made a gluten-free ermine frosting that worked great too.. nearly identical to wheat based. God bless !
