When I was taking my first cake decorating class, amongst the recipes in our introductory folder was one for high heat and humidity. We quickly realized that I have “hot hands.” The buttercream melted as I was piping. Finally, my teacher said to try the high heat and humidity frosting. It worked! It’s now the only frosting I use. The basic recipe is: 1.5 cups shortening, 2 Tb AP flour, 2 Tb dry Dream Whip, 1 tsp extract or 8 drops high potency flavoring, 1.5 lbs confectioners sugar, 1/4 c water or milk. Blend the first 4 ingredients (I recommend a stand mixer) until well mixed. Add the sugar and water, alternating and mixing after each. When all ingredients have been combined, mix on highest speed (I usually find a 5 or 6 is best) for 3 minutes. It really works!
