Hi Karen, you are correct, cream cheese frosting and heat are certainly not friends! I find it helpful to add additional powdered sugar when working with cream cheese. You can also place the frosting in the fridge for a few moments to help to make it easier to work with. ClearJel is a great option because it does not require heat. You can simply add 1-2 tsp into your frosting recipe to help to stabilize. Happy Baking! -Maranda@KA
