This article is a lifesaver for me! I own a small bakery in Jamaica. Although I specialize in breads, pastries and cookies, Jamaicans buy a cake for EVERY occasion. The pressure has been high to make cakes but I’ve struggled with an icing that can hold up in our hot weather.
