Hi Jessica,
Wowzers, that will be a challenge. You can definitely bump up the vanilla to a tablespoon or more, and maybe a drop or two of lemon or almond to give it a little more interest as well.  If you can keep the cake in a large cooler with plenty of ice for as long as you can, that will help. Once you serve, pop the cake back in the cooler again. Good luck and stay cool!
