I was thrilled to find your write up! We are working on 4-H baking for the fair and you can only imagine how hard it is to keep your project from melting. I have 2 members in my baking group that I will be working with. One had a very successful coffee cake his first year and this year we might go with carrot cake cupcakes. We are glad to see that the cream cheese frosting will work well with the heat. Do you have any other suggestions for us? We plan on using the carrot cake cupcake recipe from your site.
