Hi there, Johanna! Buttercream can be made in advance and stored in the fridge, but it'll need to be reconstituted before using it. To reconstitute the buttercream you'll want to let it warm up a bit at room temperature and then put the buttercream back in the stand mixer with the paddle attachment. The buttercream might break, it should come back together as you continue to mix but if it doesn't you can use the hairdryer trick that's outlined in our Italian Buttercream Frosting blog article.
