I'm trying to make a rainbow frosting piped onto a chocolate cupcake for my daughters birthday. This will be held as a camping trip so the cupcakes would have to be outside for most of the day if not multiple days. I'm thinking non-dairy would be the best option. Knowing that an "All-shortening All-American" could have an altered taste would you recommend adding more vanilla extract to enhance the flavor? Also should I change the ratio since I'll be adding food coloring make the rainbow colors? Also after beating the Frosting to it's desired thickness would adding the coloring and hand stirring it in affect the whipped in air that the frosting has?
