Hi there, Juanita! We'd recommend checking out our Cream Cheese Frosting recipe, it's a great balance of tangy and sweet. We found that whipped cream stabilized with gelatin didn't hold up well, you can certainly experiment with stabilizing a frosting with gelatin but keep in mind that gelatin melts so if it's fairly hot it likely won't hold up well.
