Thank you for this side by side comparison! It's been 70% and higher in humidity here lately, and I want to make a surprise birthday cake. I planned on making Italian buttercream, and your comparison helped me see that I was right. You mention adding 1/2 cup shortening to your IBC recipe. Would this be a straight addition, or would I be subbing out any butter? Thank youa
