I am considering the baking aspect and receing training to bake for events and this article is my first, but yet the most useful. Thank you so much for an informative article. To reiterate my learning points. Cream cheese and Italian Butter Cream holds up very well in hot environments. Now, my question is, what is your take on fondant in hot weather. I am not a fan of the taste, but it is easy to use when making a very smooth and decorative look for a dessert cake!
