Hi, Pam. 7-minute is basically a straight meringue or spreadable marshmallow; I didn't test it in this round (had to stop after I was up to 10 frostings; things were getting complicated!). The only roux-based frosting in the bunch is the German, which is more stable because of the eggs in it than a straight flour/milk frosting. Susan
