I rarely go without at least some shortening in a high-profile cake in summer. I find I can swing the proportion of shortening and butter in whichever direction feels most "secure". High ratio shortening is a true blessing in hot weather, and I bow to your wisdom about using powdered milk to alter the mouthfeel. Genius. Susan
