I make a mixture of sugar and ClearJel in a small bowl. Depending on the volume of the cream being whipped, I add the mixture one teaspoon at a time; for 1 cup of heavy cream, 1 teaspoon of the mixture is usually enough. For bigger batches, I add another teaspoon with the mixer running until the tracks in the bowl look pretty distinct; that's the indicator I use. Hope this helps. Susan
