Hi, Suge. I usually take a small bowl and put 1 tablespoon of Instant ClearJel in it mixed with an equal amount of granulated sugar or 2 tablespoons confectioners' sugar. Add a teaspoon at a time; you may only need one or 2 teaspoons altogether.
Whisk well to combine, then add when the cream is about 3/4 of the way whipped. Susan
