This is such a helpful post. I have had a problem with "gray pie dough" and knew it had something to do with being in the fridge for a couple of days. I like to make pie dough ahead when I am having a party or during the holidays but don't even try anymore because of the nasty gray color it turns. Now, I know why it does and how to correct it. Thanks so much Susan. Very timely information since I make lots of pies in the Fall and Winter.
