Hi Jean, both these recipes are best baked with fresh fruit rather than frozen, especially the Sunken Berry Almond Cake, which is likely to turn out a bit soggy with frozen fruit. If you want to try these recipes with frozen fruit, I'd recommend thawing, rinsing and patting the fruit dry before adding. Baking time will likely be a little longer when using frozen fruit, but check at the time recommended and reset the timer from there.
