Hi Jacqueline, both these recipes are best suited for fresh fruit, especially the Sunken Berry Almond Cake, which may become a bit soggy when made with frozen berries. That being said, it is certainly possible to make these recipes with frozen fruit. I would thaw, rinse and pat dry the fruit, and expect baking time to be a bit longer when using frozen fruit.
