I bake banana bread in my instant pot! Wonderful texture and keeps the kitchen cooler in the heat of summer! I hope KAF will experiment with baking quick breads in the instant pot. I bake cornbread, variations of banana bread, bread pudding, etc in the instant pot. It will never replace my oven for baking bread, etc, but in the heat of summer, it is a great alternative.
