I always make banana bread into muffins. My husband is diabetic and I'm not so I make one sugar-free and one batch that has regular sugar. Since neither of us can eat an entire loaf, by our selves, making muffins is perfect. I can freeze them and take one or two out at a time. We always have fresh tasting banana bread that way.
