This is such a well timed post! I thought I didn't like banana bread b/c the density in a loaf pan wasn't appealing to me. I thought I'd give it another go and put the batter into a 13x9 and found it a treat! I've experimented with other pans- including a wedding favorite, a mini bundt pan!
