Hi Steve, it is a bit confusing! First, Heavy Cream and Heavy Whipping Cream are essentially the same thing, so you should be good with either of those products. Secondly, because most ice cream recipes include a combination of milk and heavy cream, the overall fat content of the mixture is reduced so that the butterfat is more likely to fall into the ideal range for making ice cream.
