Hey there, Julia! It does sound like your ice cream is getting a bit over-churned. The ice cream won't become hard-serve consistency while in the machine, this will happen when transferred to the freezer. You want to churn the ice cream base until it has thickened is almost the consistency of soft soft-serve. We hope this helps!
