Meg L, I am on a low-carb diet too and I’ve been experimenting with homemade ice cream. You can use this recipe and just substitute Kroger‘s Carbmaster 2% milk for the regular whole milk. For the sugar, I use a combination of artificial sweeteners like Stevia, erythritol, Allulose, etc. for half the equivalent of sugar. For the other half I use either Just Like Sugar or BochaSweet. Either one helps to keep the ice cream from being rock hard. I also add 1/4 teaspoon of xanthan gum to the mix and 2 tablespoons of good vodka. I hope this helps.
