Dee, I have one of those, two — probably the same model! Had it for decades. I can tell you to make sure you use layers of rock salt and ice cubes/crushed ice, so the whole canister is nice and cold. It helps to have people with enthusiasm for the project, energy, and strong arms; teenagers and young adults come to mind. As for capacity, I've never made more than a gallon of ice cream at a time, so haven't had any problem with overflow. Making just a small amount (as small as maybe 1 1/2 quarts) works fine, as well.
