Hi Remy, the confusion here comes from the fact that we are referring to the weight in ounces rather than a volume measurement. So, a cup of water does weigh approximately 8 ounces, but a cup of our unbleached all-purpose flour is much lighter at 4.25 ounces per cup. Using that weight measurement for the flour, the weight of 3 cups of flour is 12.75 ounces.
