Hey! Great article, but I’m stuck on the math when you first explain hydration. You write “ 1 cup water (8 oz) with 3 cups flour (12 3/4 oz) is 63 % (8/12.75). But. If 1 cup is 8 oz, I’m pretty positive that 3 cups is 8x3=24 24 0z. This makes that hydration rate only 33.3%, RIGHT?
