Thanks for the explanation. I made this so much easier for myself by putting it into an Excel spreadsheet. Now all I have to do is plug in my recipe and it does all the calculations for me, even reconverts it all back to tablespoons and cups, so I don't have to mess with a scale if I don't want to. (Now I understand why my Grandma's stollen was always so dry. 55% hydration...)
