Hi Paula! With 1 cup of water and 3 cups of flour, you are around 63% hydration. I would first convert your recipe to 75% hydration, then any yeast recipe calling for between 3 and 4 cups of flour will be 3 tablespoons (23g) of the flour in the recipe + 1/2 cup (113g) of the liquid. Happy baking!
