Lizabeth Craig June 6, 2022 at 12:32pm I tried this today with 361g flour and 271g milk, with 23g flour and 115g milk for the paste. The dough is quite drier and stiffer than I would expect for a 75% hydration. Is this what is supposed to happen? Thanks Reply
