Is my math correct? My original roll recipe: 5c flour (600g), 1.5c milk (340g). For 75% hydration I need to increase the milk by 110g. My new Tangzhong rolls will have 600g flour + 450g milk. For the Tangzhong I will use 38g of the recipe’s flour amount + 190g of the recipe’s milk.
