Hi, not sure if this question has been asked already, but I live in the Philippines where the weather is generally very humid. I want to convert my favorite shokupan recipe to use tanzhong, currently the recipe has 63% hydration, should I convert it to 75%? I read your article about converting recipes from winter to summer, and it says to reduce the hydration by 10% for humid hot months…. In this case, should I just increase my recipe’s hydration to 65% and proceed with the tanzhong as is or should I stick with the 75%? Thanks!
