This bread rose much better for me when I mixed the ingredients, walked away for 2+ hours, came back and kneaded the dough (a bit, no way I have the patience for eight minutes of kneading), walked away for another hour, punched it down a bit, let it rise again, then plopped it in a loaf pan for a final rise. Just in case anyone wants to be lazy about it.
