Hi, I'm a bit at loss. I have a bread recipe that calls for 500g. If I'm going to incorporate tangzhong, then I should add 75% hydration right? That would be 375g of milk, correct? But then the recipe above says that milk only contains 87% of water, so 375g milk only contains 326g of liquid right? Then should I increase 49g milk from 375g to 424g? Thank you
