Thank you so much for the thorough explanation. I would like to confirm I have the adjustments correct. My favorite challah has 840 grams flour, 454 g water, 2 egg (74 g hydration) and 1/2 C honey (29 g hydration). Total hydration is 557 g and, to achieve a 75% ratio, needs to be increased to 630g (840g flour x 75%). I’m going to increase water to 527 g because the recipe has 103g from other ingredients . The suggested ingredients for a slurry for a loaf of 6-8 cups of flour is 46 g flour and 226 g liquid. I am going to take that amount of flour and water out of the main recipe so I will use the tangzhong slurry, 794 g flour and 228 g water to make the challah. No milk is needed. Sorry this is so long but I wanted to make sure I have the thought process and numbers correct.
