Hello! first, love your tips.
I start making crossaint with tangzhong, i will be use the 75%!

The original recipe is 500g wheat, 125 water, 150 milk, 10 instant yeast, 40 sugar, 10 salt, 40 butter... And 200 of butter for the puff paste (sorry for my english).
Maybe i should use 375ml of hydration?
and for the % of tangzhong, 32g+162ml?
