Judith, you certainly could try it but quick breads are generally not light and fluffy. Often when baked goods are dry and crumbly, it's because too much flour has worked its way into the mix. Did you use a scale to measure your ingredients? Weighing is the most accurate way to measure your flour. If you don’t have a scale, take a look at this video to see how to measure flour.
