Thanks for the guide! I tried your method to add a tangzhong to your Tuscan Coffeecake recipe, and it worked perfectly! The bread's still tender, if a little stiffer, the next day, even after being pre-sliced (didn't want the kids to be trying to slice it for breakfast).
