Here's a complicated calculation. I make your classic challah quite often. Wet ingredients are water, oil, honey and eggs. These give me a total hydration of 80%. But should I include all these ingredients in my calculations? If I omit honey, hydration is 62%. Omitting oil (0% water) is 65%. Eggs are 76% water so I should likely include them in my calculation, or perhaps 76% by weight?
