Hi Laura, were you to make a loaf of bread that was a little too dry (say it had an accidental extra 1/4 cup of flour added) that didn't have a tangzhong, and a loaf with an extra 1/4 cup of flour that did have a tangzhong, they'll both be drier than desired, but the one with the tangzhong would still have the longer shelflife and overall moisture texture of the two for sure.
