How would the 75% target for the Tangzhong method with a recipe that has add-ins like rolled oats be calculated? (We really enjoyed your soft cinnamon bun recipe!) I'm looking at King Arthur's Dark and Dangerous Cinnamon Buns recipe. The water, orange juice and honey equal about 9.64 oz liquid and the whole wheat flour and potato flour equal 15.25 oz. Do I also include the rolled oats? If so, that's 17oz. Excluding the rolled oats from the calculation gives a starting hydration of 63% but including them gives 57%. I'm not sure what to do here or in other situations where there are grains or seeds that might absorb water... or am I just overthinking this? Maybe I should just be including dry ingredients that are in a "flour" form in the calculation? Thank You
