Hi there, Lorraine! We did see your question on the recipe page for the Herb and Garlic Bubble Loaf, we're sorry if you missed our response. Just in case, here it is again: "Lorraine, we're so sorry you're struggling with this one! We can't think of any reason why it wouldn't work as a tangzhong recipe. Our calculations for 75% hydration came out to 57 grams, not too far off of yours. (We did include the water content of the butter, which might account for the difference.) It's definitely a very wet and sticky dough, but shouldn't be batter-like. We'd love to help you troubleshoot in more detail if you get in touch with our Baker's Hotline, though!"
