I tried to post this question under the specific recipe, but no luck so I'll try it here. I've made the Herb and Garlic Bubble Loaf recipe twice and it's always produced dense, slightly tough rolls. I thought this would be a great technique to try for a soft, pillowy texture. Big fail! The dough was the consistency of quick bread and I had to add almost a cup of extra flour to get something that even resembled bread dough, which kind of defeated the purpose of the extra liquid to reach the 75% ratio. Are there some recipes that just don't work with this?
