Hello thank you for this amazing article! I am going to prepare a brioche type of bread known as Kozunak back home. It calls for a recipe with 150g of sugar. My question is do we count the sugar with the flour? I read all the comments and there is no direct answer. And would you know what is the percentage of water in Crème fraîche and lard(pork fat)? Thank you,guys!
