We asked the author of this post, PJ, what she thought about gluten-free tangzhong. She said, "Gluten0free and whole grains are the subject of my next tangzhong post, but it won't be for a couple of months... give it a try and see what happens! I suspect it would [work], as it's all about starch and gluten-free flours are mainly starch; but no guarantees."
