Isn't it amazing how similar the flax egg version of this loaf is, Lucy? We couldn't believe how cake-y and light in texture it was. We think you'll like the applesauce version too — it's slightly more dense than the flax loaf but the flavor is out of this world good. Happy baking! Kye@KAF
