Hi John, try this: when you remove the bagel from the water bath, let it drain for a few seconds on the slotted spoon or whatever utensil you are using, then immediately place the bagel in a shallow bowl of your topping. The sesame seeds should stick very nicely. You can flip the bagel over if you want to add the sesame seeds to both sides.
