Hi there, Diane! We have a couple of suggestions for you to test out: You might find it's helpful to increase the hydration of your dough as PJ describes above to see if that helps. It'll also be helpful to cover the rising loaves with something that keeps out more air than a kitchen towel. We'd recommend using greased plastic wrap to help prevent a thick skin from forming.
